Our process
The craft behind every sip.
Sourcing
We start by meticulously sourcing the highest quality French wheat and pure water, purified by reverse osmosis.
Harvesting
Our wheat is harvested at peak season, usually mid-to-late June, then milled into a mash.
Fermentation
The mash is mixed with water and fermented for 70 hours, turning its sugars into alcohol.
Distillation
The wash is distilled in pot stills — five times — for the cleanest, smoothest spirit.
Rectification
Filtered through charcoal three times, then distilled once more, for an exceptional level of purity.
Bottling
Diluted to proof, then bottled and sent out into the world.
